Les Hérétiques is a rustic wine, speaking strongly of its terroir. The nose offers spice, cedar, and black cherry fruit, and touches of iron/earth. The tannins are quite present but well-integrated with more black cherries, spice and a lingering meaty quality.
Ch. d’Oupia was created by André Iché, an iconic winemaker largely responsible for the creation of the Minervois AC in 1973. He bought fabulous sites in the region, often for one franc, turning them into outstanding vineyards. He wound up with about 150 acres. Half of the wine is fermented in barrel with a maceration of 30 days, the other half is made by carbonic maceration.
Pair with turkey or duck, roasted pork, hors d'ouevres, cassoulet, eggplant lasagne, mushroom risotto or a charcuterie board.
